Kevin’s journey began in 1999 when he co-founded The Spicy Pickle sandwich shop chain in Indiana. Although it expanded to over 40 locations and even went public, Kevin felt disconnected from the food—especially as quality slipped—leading to his departure in 2008.

Determined to reconnect with the kitchen, he launched Pinche Tacos in Denver in 2009 from a modest food trailer. With bold, ingredient-forward street tacos—including braised pork belly and agave-fried chicken—Pinche quickly ignited a culinary movement.

By 2012, Pinche had expanded to multiple taquerias (some under the name Tacos, Tequila, Whiskey) and earned national acclaim, even landing on Bon Appétit’s Best New Restaurants list. Kevin summed up his approach learned under Chef Paul LoDuca in Chicago: “Keep it simple—three ingredients is all you need.”
